Honey Glazed Pineapple recipe
Ingredients:
One 2½ lb fresh pineapple, peeled and cored.
2 tablespoons of honey.
1 tablespoon of margarine.
1 ½ teaspoons of minced fresh mint.
Fresh mint sprigs.
Preparation Instructions:
Cut the pineapple lengthways into 12 spears.
Arrange the spears on a broiler pan, and set aside.
In a suitably sized saucepan, combine the honey and the margarine; place over low heat, cooking until the margarine melts.
Brush honey mixture evenly over one side of the spears.
Broil three inches from heat for 7-8 minutes.
Turn the spears over; brush evenly with the remaining honey mixture.
Broil for an another 7-8 minutes.
Sprinkle with minced mint.
Garnish with fresh mint sprigs and serve.
